Older Leaves on Cattleya

Can anyone tell me what to do about several older leaves (3 yrs. old) on my indoor Cattleya? Leaves look dried out and lacking in color more and more. The rest of the plant and leaves are in a lovely shade of green and healthy looking. Also, she is blooming! What do I do with the little sprigs shooting up? They are about an inch and the other an inch and a half? Thanks! Katie
